BBQ haloumi with strawberry salsa


250g strawberries, finely chopped

1/2 small red onion, finely chopped

2 tablespoons lime juice

2 teaspoons honey

1/4 cup coarsely chopped coriander

2 tablespoons finely shredded mint

1 red birdseye chilli, seeded, finely chopped (optional)

1 1/2 tablespoon olive oil

2 x 250g pkts haloumi, cut into 5mm-thick slices


Step 1

Combine the strawberry, onion, lime juice, honey, coriander, mint, chilli, if using, and 1 tablespoon of the oil in a medium bowl. Season.

Step 2

Heat a barbecue grill or chargrill on high. Lightly brush the haloumi with remaining oil. Cook, in batches, for 1 min each side or until charred. Transfer to a serving platter. Top with strawberry mixture. Serve immediately.
