
Delicious hot or cold, by itself or with any of the serving suggestions. We really recommend the bush tomatoes – they are a flavour bomb! Include them finely chopped as suggested, or use them whole or as a powder.
Ingredients
- 2 cloves garlic, peeled and grated (Fine Earth Organics)
- thumb sized piece of ginger, peeled and grated (OrganicsMattR)
- big splash olive oil
- salt to taste
- 2 punnets cherry tomatoes, sliced in half lengthwise (Homegrown Organics)
- 2 cans chickpeas, drained (Ritchies IGA)
- Optional: Serve with: 20g bush tomatoes, finely chopped (Bush Tucker Babies), wholegrain pasta big handful of flat leaf parsley, roughly chopped (Homegrown Organics)
Method
- Put a large, heavy based frypan over low heat.
- Add olive oil, garlic & ginger.
- Saute until garlic and ginger soften.
- Add tomatoes, bush tomato if using, chickpeas and salt. Stir thoroughly to mix well.
- Add 1/3 cup water and cover with a tight fitting lid.
- Braise over the lowest heat possible until tomatoes have released all their liquid and are quite broken down, about half an hour.
- Check for salt. Stir through parsley.

- brown rice mashed potato grilled or roasted chicken (Chef2Farmer)
