Braised Chickpea & Tomato

Delicious hot or cold, by itself or with any of the serving suggestions. We really recommend the bush tomatoes – they are a flavour bomb! Include them finely chopped as suggested, or use them whole or as a powder.

Ingredients

  • 2 cloves garlic, peeled and grated (Fine Earth Organics)
  • thumb sized piece of ginger, peeled and grated (OrganicsMattR)
  • big splash olive oil
  • salt to taste
  • 2 punnets cherry tomatoes, sliced in half lengthwise (Homegrown Organics)
  • 2 cans chickpeas, drained (Ritchies IGA)
  • Optional: Serve with: 20g bush tomatoes, finely chopped (Bush Tucker Babies), wholegrain pasta big handful of flat leaf parsley, roughly chopped (Homegrown Organics)

Method

  1. Put a large, heavy based frypan over low heat.
  2. Add olive oil, garlic & ginger.
  3. Saute until garlic and ginger soften.
  4. Add tomatoes, bush tomato if using, chickpeas and salt. Stir thoroughly to mix well.
  5. Add 1/3 cup water and cover with a tight fitting lid.
  6. Braise over the lowest heat possible until tomatoes have released all their liquid and are quite broken down, about half an hour.
  7. Check for salt. Stir through parsley.
